Simple Buttered Pasta

 Although pesto is a classic sauce for linguine, this simple butter sauce is sure to impress a picky palate. This recipe may take a bit of practice to get right. Once you’ve got it down, try adding grated garlic, anchovy paste, red chilli flakes or cooked mushrooms!

 Ingredients

  • Freshly cooked pasta
  • 2-4 tablespoons butter, cold
  • 2-4 tablespoons of water
  • ¼ cup parmesan cheese, freshly grated
  • Salt to taste
  • Pepper to taste
  • Herbs (optional)

Equipment

Directions

 Bring the water to a boil over high heat. Once boiling, add the butter and a pinch of salt. Continuously whisk and swirl the pan until the mixture has thickened and emulsified. Once thick, toss in the cooked pasta.

 Plate and top with cheese, and freshly cracked pepper. Serve immediately.
