The Perfect Drummy Pops - Broil King

Chicken drumsticks are a great grab and go appetizer or pot luck item, fully equipped with their own handle. Wrapping the head in prosciutto locks in moisture when grilling them and adds a salty savoury deliciousness.

  1. In a small bowl mix Perfect BBQ rub, olive oil and apple cider vinegar, whisk thoroughly. Prepare the drumsticks by cutting the skin and meat away from the bone just above the knuckle on the drumstick. Remove the remaining knuckle skin and cartilage by hand and pull the meat up towards the thick end of the drumstick. Peel the skin down from the thick end of the drumstick to expose the meat. Spread goats cheese generously onto the prosciutto slices, wrap the prosciutto around the drumstick meat then pull the skin back up over the prosciutto as far as possible.
  2. Place all the drumsticks in a large bowl and pour over the marinade. Toss carefully.
  3. Preheat your gas grill on HIGH then reduce heat to MEDIUM. Place the drumsticks on the warming rack and roast for 15 minutes, flip then roast for another 15 minutes. As always keep your lid closed while grilling. Open the lid and sauce the drumsticks thoroughly, roast for another five minutes then flip and sauce the other side, roast for a final five minutes.
  4. Remember that poultry is cooked at 170°F (77°C), use a thermometer.
